Ingredients:
1 medium head of Cauliflower
Directions:
1. Boil a pot of water
2. Cut off the leaves and cut out the core of the cauliflower.
3. Cut the cauliflower into small florets
4. Put florets into a blender or food processor and just use the pulse option (about 5-10 times) until the florets are the size of grains of rice
5. Cook the "rice" in water for 2-3 minutes or until tender
