**Not Gluten Free?? Use a ready made (or your own homemade recipe) 9 inch double pie crust recipe for the crust, use regular flour instead of gluten free
**Not Dairy Free?? Use butter instead of oil
**Grain Free?? Leave out the gluten free flour
**Paleo?? (Only use this recipe if you are comfortable) Leave out baking soda and vanilla in crust, substitute sugar with 2 cups evaporated cane juice + 3 Tbs molasses or honey
Serves: 9 inch pie
Ingredients:
Pie Crust (Double)
2 1/2 cups almond flour
1/2 tsp sea salt
1/2 tsp baking soda
1/2 cup olive oil
2 Tbs maple syrup (or 1 Tbs white or coconut sugar and 1/2 Tbs olive oil)
1 tsp pure vanilla extract
Filling
1/2 cup olive oil
3 Tbs gluten free flour (or cornstarch)
1/4 cup water
1/2 cup coconut sugar
1/2 cup pure maple syrup
6 Granny Smith Apples, peeled cored and sliced
Directions:
1. Preheat oven to 325 degrees F
2. In a medium bowl combine all pie crust ingredients
3. Pat and flatten half of dough into a 9x9 pie dish
4. Bake 10-15 minutes or until crust is golden brown
5. Preheat oven to 425 degrees F
6. Pour oil into heavy saucepan
7. Stir in gluten free flour to make a paste
8. Add water, sugar and maple syrup and bring to a boil
9. Reduce heat to low and let simmer
10. Fill bottom pie crust with apples
11. Take the other half of dough and crumble over apples
12. Slowly pour sugar mixture over apples and top crust
13. Bake 15 minutes at 425 degrees F
14. Reduce temperature to 350 degrees F
15. Bake for 35 to 45 minutes on 350 degrees F or until apples are soft to the touch with a fork
