**Not Gluten Free?? Use regular flour instead of almond and coconut
**Not Dairy Free?? Use butter instead of coconut oil
**Grain Free?? No change
**Paleo?? Do not add vanilla in recipe
Serves: about 15 cookies
Ingredients:
1/4 cup honey
1/4 cup coconut oil, melted
1 egg (or 1/4 cup egg whites)
1/2 tsp pure vanilla extract
1 1/2 cups almond flour (Cinderella loves Trader Joe's Just Almond Meal)
2 Tbs cinnamon + 1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp coconut flour
1/2 tsp baking soda
1/4 tsp sea salt
olive oil cooking spray
Directions:
1. Combine all ingredients in a large bowl except for 2 Tbs cinnamon (save for later) and mix well
2. Cover and refrigerate for at least 30 minutes
3. Preheat oven to 350 degrees F
4. Spray baking sheet with cooking spray
5. Roll dough into small balls and coat in 2 Tbs cinnamon
6. Bake for 10 minutes
