Sometimes you just don't have the time to make a real baked potato in the oven, which takes about an hour. You can use your microwave in about 10 minutes to make a "baked" potato and no one will ever know.
Just take your potato and a fork. Poke some holes in the potato with the fork. My mom always said to do this so the potato won't explode in the microwave (or in the oven if you are really baking it). It happens to some people and not to others. I don't know about you, but I'm not taking the chance that my potato explodes anywhere. 1. I don't want to clean that up. 2. I won't have a potato to eat if it explodes!
So after you poke holes, (mom always said to err on the side of caution also) just wrap your potato in a paper towel and set in the microwave. Depending on how big the potato is will determine how long you need to cook it for. I usually start out with 10 minutes. After that I cut the potato open and see if it is completely soft on the inside. If it isn't I put it back in for 2 minutes at a time until the whole inside is soft.
Voila! Baked, but not really...potato.
Top with any of your favorite toppings; butter, salt, sour cream and chives, cheddar cheese and broccoli, etc. Yum!
