**Not Dairy Free?? use butter instead of olive oil
**Grain Free?? No change
**Paleo?? Do not add vanilla or optional peanut butter to recipe
Serves: about 18 cookies
Ingredients:
2 cups almond flour (Cinderella loves Trader Joe's Just Almond Meal)
1/4 cup olive oil
1/4 tsp vanilla extract
1/4 cup honey
1 egg (or 1/4 cup egg whites)
1/8 tsp baking soda
1/8 tsp sea salt
1/2 Tbs natural peanut butter (optional)
1/4 cup pecan pieces (optional)
olive oil cooking spray
Directions:
1. Preheat oven to 325 degrees F
2. Mix almond flour, baking soda and sea salt
3. Add olive oil, vanilla, honey, egg, peanut butter and pecans and mix well
4. Spray a baking sheet with cooking spray
5. Roll dough into small balls and press flat onto baking sheet
6. Bake 10-12 minutes on 325 degrees F
