Vanilla Peanut Butter Pie (No Bake Recipe)

**Not Gluten Free?? Use a regular pie crust
**This is not a Dairy Free/Grain Free/Paleo recipe-sorry!

Serves: about 8 slices

Ingredients:

1/3 cup peanut butter
1 cup powdered sugar
1 package instant vanilla pudding
2 cups milk
1 container whipped topping (Cinderella loves Cool Whip Whipped Topping)

1 pie crust 
1 1/4 cups almond flour
1/4 tsp sea salt
1/4 tsp baking soda
1/4 cup olive oil
1 Tbs maple syrup (can substitute 1 Tbs white or coconut sugar and 1/2 Tbs olive oil)
1/2 tsp pure vanilla extract

Directions:

1. Preheat oven to 325 degrees F
2. In a medium bowl combine all ingredients for pie crust (almond flour, salt, baking soda, oil, maple syrup and vanilla)
3. Pat and flatten dough into an 8x8 pie dish
4. Bake 10-15 minutes or until crust is golden brown, set aside
5. In a bowl mix together peanut butter and powdered sugar until it forms a crumble
6. In another bowl, prepare the vanilla pudding according to the package
7. Spread 3/4 of the peanut butter crumble onto the baked pie crust
8. Pour pudding over the crumble
9. Spread whipped topping over the pudding
10. Sprinkle the remaining peanut butter crumble on top of the whipped topping
11. Chill for at least one hour in the refrigerator before serving
