Serves: 4
Ingredients:
One large bunch of asparagus (raw)
2 Tbs olive oil + 1/4 cup olive oil
4 cloves of garlic
1 onion sliced
1/4 cup slivered almonds
1/4 tsp sea salt + 1/2 tsp sea salt
Directions:
1. Boil a pot of water with 2 Tbs olive oil an 1/4 tsp sea salt
2. While water is boiling chop the last inch of the asparagus off and discard
3. When water comes to a boil add raw asparagus and cook on high heat for about 5 minutes
4. Strain water from asparagus and return it to the pot
5. Put 1/4 cup olive oil, 4 cloves of garlic, sliced onion and 1/2 tsp sea salt on top of the asparagus and mix well
6. Cook on medium heat for about 10-15 minutes or until asparagus and onions are very tender
7. Stir in almonds and cook for additional 5 minutes
