Buffalo Chicken Pizza

**Not Gluten Free?? Use regular pizza dough
**Not Dairy Free?? Use mozzarella cheese instead of soy
**Grain Free/Paleo?? Leave off the cheese 

Serves: 4

Ingredients:

1 gluten free pizza crust (buy one store made or make your own):
1 cup almond meal (or grind 1 cup almonds in food processor until it looks like flour)
1/2 cup walnut meal (or grind 1/2 cup walnuts in food processor until it looks like flour)
2 eggs
2 tsp olive oil + 1 Tbs olive oil
1/2 tsp sea salt
toppings:
1 pound ground chicken (or ground turkey)
olive oil cooking spray
1/4 cup olive oil
3/4 cup hot sauce (Cinderella loves Frank's RedHot original sauce)
1/8 tsp black pepper
1/4 tsp sea salt
1/4 tsp cayenne pepper
2 cups dairy free cheese (Cinderella recommends Daiya dairy free cheese shreds mozzarella style)

Directions:

1. Preheat oven to 350 degrees F
2. In a bowl mix together the almond meal, walnut meal, eggs, 2 tsp olive oil and salt (add more almond meal if needed)
3. Take the dough and form a ball
4. Use 1 Tbs olive oil to oil the bottom of a pizza pan or baking sheet
5. Press the dough flat into the pan with your fingers
6. Bake crust for 10 minutes and remove from oven
7. While crust is baking, spray a generous amount of cooking spray in a medium skillet and cook chicken until cooked through and no pink is left
8. Add olive oil, hot sauce, black pepper, salt and cayenne pepper to chicken and mix well
9. Simmer for 5 minutes on a low flame
10. Turn oven up to 400 degrees F
11. On crust sprinkle 1 cup cheese on the bottom, top with chicken and sauce mixture and then top with the rest of the cheese
12. Bake pizza for about 10 minutes at 400 degrees F or until cheese is brown and melted through
