Cajun Shrimp Pasta

**Not Gluten Free?? Use regular linguini pasta
**Not Dairy Free?? Use regular heavy cream, butter instead of olive oil and top with grated Romano or Parmesan cheese
**Grain Free?? Serve over spinach or with your favorite veggies

Serves: 2

Ingredients:

1/2 pound gluten free pasta (Cinderella loves Barilla gluten free spaghetti with this recipe)
12 jumbo shrimp
2 tsp Cajun seasoning (see Cinderella's post to make your own Cajun Seasoning)
2 Tbs olive oil + 2 Tbs olive oil
1 green bell pepper
1 red bell pepper
1/2 pound small white mushrooms, sliced
1 scallion, chopped
1 1/2 cups dairy free creamer (Cinderella loves So Delicious dairy free creamers)
1/4 tsp dried basil
1/4 tsp lemon pepper
1/4 tsp sea salt + 1/2 tsp sea salt
1/4 tsp ground black pepper

Directions:

1. Boil a large pot of water with 1/4 tsp sea salt and 2 Tbs olive oil
2. When water is boiled cook spaghetti according to package
3. Put shrimp in a bowl with cajun seasoning and coat well
4. In a large skillet over medium flame heat 2 Tbs olive oil
5. Cook shrimp in oil, about 3 minutes on each side
6. Add green peppers, red peppers, mushrooms and scallions, cook for about 5 minutes
7. Reduce heat to low and pour in cream, basil, lemon pepper, salt, garlic powder and black pepper and cook another 5 minutes
8. Mix pasta with sauce and shrimp
