Italian Meatballs

**Not Gluten Free?? Use regular breadcrumbs instead of almond meal
**Not Dairy Free?? Use regular milk and add 1/4 cup grated Romano or Parmesan cheese to the meat mixture before cooking
**Grain Free?? No change :-)
**Paleo?? Choose your meat carefully, replace milk with water or homemade almond milk

Serves: 4

Ingredients:

1/2 pound ground beef
1/2 pound ground pork
1 egg
1/4 cup non-dairy milk  (Cinderella loves Target or Stop and Shop brand unsweetened original almond milk)
1/2 cup almond meal or gluten free breadcrumbs (Cinderella loves Trader Joe's Just Almond Meal)
1/2 tsp sea salt
1 tsp dried oregano
1 Tbs dried parsley
1/2 tsp garlic powder
1/2 tsp black pepper
1/4 cup grated cheese (optional)
olive oil cooking spray

Directions:

1. Preheat oven to 350 degrees F (OR see on the stove method at step 5)
2. Mix all ingredients in a large bowl with your hands
3. Grease a large cookie sheet with cooking spray
4. Form meatballs with hands and place on cookie sheet so they are not touching
5. Bake at 350 degrees F for 10 minutes and turn meatballs over, then bake for another 15-20 minutes or until no longer pink in the middle (OR cook meatballs in 1/2 cup olive oil over a medium flame, stirring occasionally, for about 20 minutes or until no longer pink in the middle)
6. If you wish, serve with gluten free pasta and Grandma Beatrice's Italian Pasta Sauce
