Lemon Chicken Thighs with Potatoes and Onions

**Paleo?? Leave out the potatoes

Note: This recipe needs 1 hour to bake!

Serves: 4

Ingredients:

4 boneless skinless chicken thighs
4 sweet potatoes (or any potato of your choice), quartered
2 sweet onions, cut into large pieces
1 cup lemon juice
1 tsp sea salt
1 tsp black pepper
1 tsp garlic powder
1 tsp oregano

Directions:

1. Preheat oven to 450 degrees F
2. Place chicken at the bottom of a large baking pan
3. Place potatoes and onions around chicken
4. Pour lemon juice on top of chicken
5. Sprinkle salt, pepper, garlic and oregano over chicken
6. Bake for 15 minutes at 450 degrees, then baste the sauce on top of the chicken and turn the heat down to 350 degrees F
7. Bake another 15 minutes at 350 degrees F and baste the sauce on top of the chicken again
8. Bake another 15 minutes at 350 degrees F and baste the sauce on top of the chicken again
9. Bake another 15 minutes at 350 degrees F and baste the sauce on top of the chicken again
