**Not Dairy Free?? Use Havarti or mozzarella cheese instead of soy
**Grain Free?? No change :-)
**Paleo?? Leave off the cheese and replace with sliced green and red peppers
Serves: 4
Ingredients:
1 gluten free pizza crust (buy one store made or make your own):
1 cup almond meal (or grind 1 cup almonds in food processor until it looks like flour)
1/2 cup walnut meal (or grind 1/2 cup walnuts in food processor until it looks like flour)
2 eggs
2 tsp olive oil + 1 Tbs olive oil
1/2 tsp sea salt
toppings:
2 tomatoes, sliced
1 cup dairy free cheese (Cinderella recommends Daiya dairy free cheese shreds mozzarella style)
1 tsp basil
1 tsp oregano
2 Tbs olive oil
1. In a bowl mix together the almond meal, walnut meal, eggs, 2 tsp olive oil and salt (add more almond meal if needed)
2. Take the dough and form a ball
3. Use 1 Tbs olive oil to oil the bottom of a pizza pan or baking sheet
4. Press the dough flat into the pan with your fingers
5. Put oven on 350 degrees and put crust in oven while preheating
6. Remove crust when oven is preheated and top with tomatoes, cheese, basil and oregano
7. Drizzle top of pizza with olive oil and bake for 10 minutes on 350 degrees F
