Corn Muffins



**Not Gluten Free?? Use regular flour
**Not Dairy Free?? Use regular milk and butter instead of oil
**This is not a grain free or Paleo recipe-sorry!

Serves: about 12 muffins

Ingredients:

¼ cup olive or vegetable oil
¾ cup coconut sugar (or white sugar)
2 eggs
1 Tbs vanilla extract
1 ½ cups biscuit baking mix (Cinderella loves Bisquick Gluten Free Pancake and Baking Mix)
½ cup yellow cornmeal
½ cup dairy free milk (Cinderella loves unsweetened original almond milk)
Cooking spray

Directions:

1. Preheat oven to 375 degrees F
2. Grease 12 muffin cups with cooking spray
3. In a large bowl mix together oil and sugar
4. Stir in eggs and beat into mixture
5. Stir in vanilla
6. Stir in baking mix, cornmeal and milk
7. Fill muffin cups 1/2 way with batter
8. Bake for 20 to 30 minutes until golden brown
